Bar Snack Cheesecake

- --Crust-- shopping list
- 14 oz crushed pretzels shopping list
- 2 tbsp honey shopping list
- 2 1/2 tbsp butter, melted shopping list
- 1/3 cup smooth peanut butter, warmed until runny shopping list
- --chili Ganache-- shopping list
- 1/2 cup 2% (at least) milk shopping list
- 1/2 tbsp chili powder shopping list
- 4 oz bittersweet chocolate shopping list
- ---Cheesecake--- shopping list
- 24 oz. cream cheese, softened shopping list
- 1/3 cup sugar shopping list
- 2 eggs shopping list
- 2 tbsp milk shopping list
- 1 tbsp custard powder shopping list
How to make it
- ---Crust---
- Preheat oven to 325F.
- Blend pretzels, butter and honey until well combined.
- Press into the bottom of a greased and lined 9" springform pan.
- Bake 8 minutes.
- Pour the melted peanut butter over the pretzel crust, and cool completely.
- ---Ganache---
- In small saucepan, heat milk and chili powder over medium-high heat, bringing just below a boil.
- Remove from heat and pour over chocolate.
- Stir, and allow to sit until chocolate has melted completely.
- Pour over cooled crust and chill.
- ---Cheesecake---
- Reduce oven temperature to 300°F.
- Beat cheese and sugar in large mixing bowl until fluffy.
- Mix eggs, milk and custard powder, beat into cheese.
- Pour into crust.
- Bake 45 minutes, then turn off oven and allow to cool inside for 1 hour.
- Remove to a rack and cool to room temperature, then cover and chill overnight before unmoulding.
