Pistachio Green Cake With Double Chocolate Fudge Frosting

- CAKE: shopping list
- 125 g soft butter shopping list
- 1 cup sugar shopping list
- 3 eggs shopping list
- 1 1/2 tsp vanilla extract shopping list
- 1 cup all-purpose flour shopping list
- 1 tsp baking powder shopping list
- 1/4 cup ground pistachios shopping list
- green food colour,few drops to get a light green colour shopping list
- milk(as required) shopping list
- SUGAR SYRUP: shopping list
- 1/4 cup icing sugar shopping list
- 1/4 cup water shopping list
- Combine both in a bowl and stir until sugar is dissolved. shopping list
- dark chocolate FUDGE FROSTING: shopping list
- 200 gm / 8 oz dark chocolate shopping list
- 200 gm / 8 oz butter shopping list
- 8 level tsp golden syrup shopping list
- GREEN chocolate FUDGE FROSTING: shopping list
- 50 gm / 2 oz white chocolate shopping list
- 50 gm / 2 oz butter shopping list
- 2 level tsp golden syrup shopping list
- Green food colour,few drops(to make light green frosting) shopping list
- EXTRA: shopping list
- 1/2 cup pistachios,chopped/sliced shopping list
- pistachios,finely chopped (as required for sides of cake) shopping list
How to make it
- Preheat oven to 180 degrees C.Grease and line an 8 inch round pan.
- In a bowl,cream together the butter and sugar.
- Beat in the eggs, one at a time, then stir in the vanilla.
- Combine flour and baking powder,add to the creamed mixture with ground pistachios and mix well.
- Finally stir in the milk and colour until batter is smooth.
- Pour batter into the prepared pan.
- Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
- Remove from oven and leave in the pan for 5 minutes,before turning out on a wire rack to cool.
- When completely cooled,cut the cake into 3 layers.
- DARK CHOCOLATE FUDGE FROSTING:
- Combine dark chocolate and butter in a bowl.Melt in microwave for 1 - 1 1/2 minutes,stirring twice during this process.
- Remove from MW and stir till smoothed.Leave to cool (in refrigerator) for 5 minutes and then add golden syrup.
- Whisk till smoothed and mixture begins to thicken.
- GREEN CHOCOLATE FUDGE FROSTING:
- Combine white chocolate and butter in a bowl.Melt in microwave for 1 - 1 1/2 minutes,stirring twice during this process.
- Remove from MW and stir till smoothed.Leave to cool (in refrigerator) for 5 minutes and then add golden syrup and green color.
- Whisk till smoothed and mixture begins to thicken.
- ASSEMBLING:
- Place one layer of the cake on your serving platter,brush with sugar syrup(optional,if the sponge hasn't come out very soft, you can sprinkle sugar syrup).
- Spread 1/3 of the dark chocolate frosting and sprinkle some chopped pistachios over it.
- Place the second layer over this,and repeat with the syrup,1/3 of the chocolate frosting and chopped pistachios.
- Place the last cake layer.Spread the remaining chocolate frosting over the top and sides of the cake.
- Fill piping bag with green coloured frosting and decorate around top edge of the cake.Place some sliced pistachios on top to decorate.
- Press the finely chopped pistachios on sides of the cake.
- Chill well before serving.
