How to make it

  • Bring Chicken broth and water to a boil.
  • Add orzo, cook according to directions & drain.
  • Mix warm orzo with 1/2 C olive oil. Set aside until cool. Toss with spinach, tomatoes, olives, onions, basil, nuts, and cheese. Add 1/4C remaining oil and lemon juice. If mixture is too dry, add remaining 1/4 C oil. Season with S &P. Toss to mix lightly, but well. If making ahead cover & refrigerate up to 2 hours in advance. Bring to room temp. before serving. Add chicken breast to make into a main dish.

    This makes the perfect orzo salad. I made it as a side dish without the chicken and used grape tomatoes because I like them better than sun dried in this dish. This is a keeper. Great as a side dish for any kind of party.
