Ingredients

Cooked Dressing:

2 eggs, well beaten

1 cup (scant) sugar

¾ teaspoon salt

½ teaspoon dry mustard

1 tablespoon (heaping) flour

½ cup cider vinegar

¾ cup water

Potato Salad ingredients:

½ cup cooked dressing

1 cup mayonnaise (do not use Miracle Whip)

1 tablespoon (or to your taste) prepared mustard

salt and pepper, to your taste

6 potatoes, boiled until tender, drained well and diced

4 radishes, very thinly sliced

2 stalks celery, thinly sliced

1 small onion, diced

6 hard-boiled eggs, peeled and diced

Directions

Place all Cooked Dressing ingredients in a medium saucepan and bring to a gentle simmer; cook until sauce is thickened, stirring constantly. Cool completely and store in a glass container in the refrigerator - dressing will keep for up to a month.

To make the potato salad, add the mayonaisse, prepared mustard, salt and pepper to 1/2 cup of the cooked dressing. Prepare the other potato salad ingredients in a large bowl, and gently toss with the dressing mixture. Chill for several hours to allow the flavors to come together.

I'm not an overall fan of potato salad, but I LOVE this one. It's pretty much the only potato salad I'll eat. I love that it's not overly sweet b/c it's made with mayo, not Miracle Whip. It's delicious!
