Potato Salad with Homemade Dressing

- Cooked Dressing: shopping list
- 2 eggs, well beaten shopping list
- 1 cup (scant) sugar shopping list
- ¾ teaspoon salt shopping list
- ½ teaspoon dry mustard shopping list
- 1 tablespoon (heaping) flour shopping list
- ½ cup cider vinegar shopping list
- ¾ cup water shopping list
- potato Salad ingredients: shopping list
- ½ cup cooked dressing shopping list
- 1 cup mayonnaise (do not use Miracle Whip) shopping list
- 1 tablespoon (or to your taste) prepared mustard shopping list
- salt and pepper, to your taste shopping list
- 6 potatoes, boiled until tender, drained well and diced shopping list
- 4 radishes, very thinly sliced shopping list
- 2 stalks celery, thinly sliced shopping list
- 1 small onion, diced shopping list
- 6 hard-boiled eggs, peeled and diced shopping list
How to make it
- Place all Cooked Dressing ingredients in a medium saucepan and bring to a gentle simmer; cook until sauce is thickened, stirring constantly. Cool completely and store in a glass container in the refrigerator - dressing will keep for up to a month.
- To make the potato salad, add the mayonaisse, prepared mustard, salt and pepper to 1/2 cup of the cooked dressing. Prepare the other potato salad ingredients in a large bowl, and gently toss with the dressing mixture. Chill for several hours to allow the flavors to come together.

I'm not an overall fan of potato salad, but I LOVE this one. It's pretty much the only potato salad I'll eat. I love that it's not overly sweet b/c it's made with mayo, not Miracle Whip. It's delicious!
