Pumpkin Doughnuts Recipe
A very nice change of pace for the plain donut. These are awesome. Be prepared to hand out the recipe, they are addicting.

Ingredients
  • 4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 eggs
  • 1 cup granulated sugar
  • 2 tablespoons butter
  • 1 cup pumpkin
  • 1 tablespoon lemon juice
  • 1 cup evaporated milk
  • Frosting:
  • 3 cups powdered sugar
  • 1 teaspoon orange rind
  • 2 tablespoons orange juice
  • 1 tablespoon evaporated milk

Directions
  1. Combine dry ingredients.
  2. Combine liquid ingredients.
  3. Add dry mixture to the liquid mixture and mix well then chill for 2 hours.
  4. Knead 6 times on a floured board then roll to 1/4" thickness and cut with a doughnut cutter.
  5. Deep fry until golden brown.
  6. Combine all frosting ingredients and dip doughnuts in it.

Can you cook donuts in a deep skillet if you don't have a deep-fryer ? Just curious as these look awesome!

These look great, just a quick question, could you substitue the pumpkin for the yellow sweet potatoe? (I'm intolerant to pumpkins)
