Elaines Creamy Homemade Mushroom and Leek Soup

- 1 lb mushrooms, finely chopped shopping list
- 2 tbsp olive oil shopping list
- 1 large leek, finely chopped shopping list
- 1 1/2 cups chicken stock shopping list
- 2 1/2 cups whole milk shopping list
- 1 potato, boiled and crushed shopping list
- salt and pepper shopping list
- 1 tsp 'vegetable medley' seasoning (made by McCormick's) shopping list
How to make it
- in a saucepan, lightly saute the leek in the oil
- in the meantime:
- in a soup pot, place the chicken stock and chopped mushrooms
- heat to boiling
- add the water, salt, pepper (to your taste)
- add the crushed potato and stir thoroughly
- add the McCormick's vegetable medley seasoning
- add the milk
- bring slowly to the boil, stirring very frequently to prevent the milk from scorching
- NOTE:
- This soup can easily be served as a quick, filling lunch, or at dinner!
- Enjoy!
