How to make it

  • Heat oil in 10-inch skillet over medium-high heat. Cook pork in oil 6 to 8 minutes, stirring occasionally, until browned on all sides.
  • Mix pork and remaining ingredients except flour and butter in 3-quart slow cooker.
  • Cover and cook on low heat setting 6 to 7 hours.
  • mix flour and butter; gradually stir into stew until blended. Increase heat setting to High. Cover and cook 30 to 45 minutes, stirring occasionally, until thickened.
  • Substitution: Can remove parsnips and add 2 more sliced carrots (if you absolutely must ;-).

    A wonderful recipe except that you need to add the tag "Freezes well". I froze several servings when I made the recipe and just had one of the servings for a hearty and satisfying lunch at work. My only quibble is the lack of green -- I added a cup of frozen peas.

    Parsnips are a unique vegetable. Used to be a common winter vegetable because they keep well. But they're not so popular now. They aren't available year round, but you can get them in the autumn because they fry well in butter and add a special, unique flavor to soups. Give them a shot.
