My Best Winter Pork Stew Recipe
A very filling, and tasty, winter-time stew.

Ingredients
  • 1 tb vegetable oil
  • 1 1/2 lb pork loin roast boneless; cubed, 1 inch
  • 3 md carrot; 1/4 inch slices
  • 1 md onion; chopped
  • 2 c parsnips; 1/2 inch cubes
  • 1 1/2 c butternut squash; 1 inch cubes
  • 4 c chicken broth
  • 1 ts dried sage
  • 3/4 ts thyme leaves
  • 1/2 ts salt
  • 1/2 ts pepper
  • 3 tb flour
  • 3 tb butter

Directions
  1. Heat oil in 10-inch skillet over medium-high heat. Cook pork in oil 6 to 8 minutes, stirring occasionally, until browned on all sides.
  2. Mix pork and remaining ingredients except flour and butter in 3-quart slow cooker.
  3. Cover and cook on low heat setting 6 to 7 hours.
  4. mix flour and butter; gradually stir into stew until blended. Increase heat setting to High. Cover and cook 30 to 45 minutes, stirring occasionally, until thickened.
  5. Substitution: Can remove parsnips and add 2 more sliced carrots (if you absolutely must ;-).

Parsnips are a unique vegetable. Used to be a common winter vegetable because they keep well. But they're not so popular now. They aren't available year round, but you can get them in the autumn because they fry well in butter and add a special, unique flavor to soups. Give them a shot.


This is great i love it my mom used parsnips alot in her soups and stews .great one rottman way to go ......*5*
