My Best Winter Pork Stew

- 1 tb vegetable oil shopping list
- 1 1/2 lb pork loin roast boneless; cubed, 1 inch shopping list
- 3 md carrot; 1/4 inch slices shopping list
- 1 md onion; chopped shopping list
- 2 c parsnips; 1/2 inch cubes shopping list
- 1 1/2 c butternut squash; 1 inch cubes shopping list
- 4 c chicken broth shopping list
- 1 ts dried sage shopping list
- 3/4 ts thyme leaves shopping list
- 1/2 ts salt shopping list
- 1/2 ts pepper shopping list
- 3 tb flour shopping list
- 3 tb butter shopping list
How to make it
- Heat oil in 10-inch skillet over medium-high heat. Cook pork in oil 6 to 8 minutes, stirring occasionally, until browned on all sides.
- Mix pork and remaining ingredients except flour and butter in 3-quart slow cooker.
- Cover and cook on low heat setting 6 to 7 hours.
- mix flour and butter; gradually stir into stew until blended. Increase heat setting to High. Cover and cook 30 to 45 minutes, stirring occasionally, until thickened.
- Substitution: Can remove parsnips and add 2 more sliced carrots (if you absolutely must ;-).
