How to make it

  • Combine oils, ginger, and pepper
  • brush on the tuna steaks
  • sprinkle with salt
  • marinate for 30 minutes
  • combine sugar, water, rice vinegar, soy sauce, and vinegar
  • Bring to the boil on high heat, and reduce until syrupy (about 15 minutes)
  • whisk in Wasabi paste
  • The glaze should be used at room temperature
  • grill tuna 2 minutes per side, with the lid closed for 'very rare'
  • or, grill 3 to 4 minutes per side for 'medium-rare'
  • Drizzle glaze over the fish

    I am not usually that fond of Japanese food but this is lovely. I cooked the tuna all the way through though, I hate raw or nearly raw fish
