According to Japanese cuisine, this tuna should be cooked to the very rare stage. However, you can very easily cook it to your preference!

  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 tbsp grated ginger
  • 1 tbsp cracked black pepper
  • 4 eight-ounce tuna steaks about 1 inch thick
  • ---------------------------
  • Wasabi Soy Sauce Glaze:
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1/2 cup rice vinegar
  • 1/4 cup light soy sauce
  • 4 slices fresh ginger, smashed
  • 2 tsp Wasabi powder
  • salt

Directions
  1. Combine oils, ginger, and pepper
  2. brush on the tuna steaks
  3. sprinkle with salt
  4. marinate for 30 minutes
  5. combine sugar, water, rice vinegar, soy sauce, and vinegar
  6. Bring to the boil on high heat, and reduce until syrupy (about 15 minutes)
  7. whisk in Wasabi paste
  8. The glaze should be used at room temperature
  9. grill tuna 2 minutes per side, with the lid closed for 'very rare'
  10. or, grill 3 to 4 minutes per side for 'medium-rare'
  11. Drizzle glaze over the fish

I am not usually that fond of Japanese food but this is lovely. I cooked the tuna all the way through though, I hate raw or nearly raw fish
