Pinto Bean Muffins

- 2 eggs shopping list
- 1 cup mashed pinto beans shopping list
- 1 cup milk shopping list
- 2 cups flour shopping list
- 1/4 cup vegetable oil shopping list
- 2 teaspoons brown sugar shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons baking powder shopping list
How to make it
- Mix dry ingredients.
- Beat eggs then mix with milk, oil and mashed beans.
- Combine all ingredients mixing enough to just moisten dry ingredients.
- Fill muffin tins 1/2 full and bake at 400 for 25 minutes.
- Serve hot.

This recipe sounds so unusual but I can imagine the muffins would be very moist. I'm going to give this a try and I have a sneaking suspicion I'm going to like them ;) Thanks for submitting a "5" fork good for you recipe Chefmeow.
