Pinto Bean Muffins Recipe
I know, it sounds weird, but try it you will be surprised with how moist and tasty these muffins are. Yummers. Enjoy

Ingredients
  • 2 eggs
  • 1 cup mashed pinto beans
  • 1 cup milk
  • 2 cups flour
  • 1/4 cup vegetable oil
  • 2 teaspoons brown sugar
  • 1 teaspoon salt
  • 2 teaspoons baking powder

Directions
  1. Mix dry ingredients.
  2. Beat eggs then mix with milk, oil and mashed beans.
  3. Combine all ingredients mixing enough to just moisten dry ingredients.
  4. Fill muffin tins 1/2 full and bake at 400 for 25 minutes.
  5. Serve hot.

This recipe sounds so unusual but I can imagine the muffins would be very moist. I'm going to give this a try and I have a sneaking suspicion I'm going to like them ;) Thanks for submitting a "5" fork good for you recipe Chefmeow.
