Yet another delicious looking recipe I found in an old back issue of Country Magazine from Oct/Nov 2004! This recipe was submitted by a man named Robert Atwood from West Wareham, Massachusetts. Thank you Robert-looks great!

Ingredients
  • 1 1/2 lbs parsnips, peeled and julienned
  • 1/4 cup butter
  • 1/4 cup water
  • 1/2 tsp dried oregano
  • 1/2 tsp dried parsley flakes
  • 1/4 tsp salt
  • 1/8 tsp pepper

Directions
  1. Place parsnips in an ungreased 2 qt baking dish; dot with butter. Add water to pan. Sprinkle oregano, parsley, salt and pepper over parsnips. Cover and bake at 350ยบ for 45 mins or til tender.
  2. Yeild 4 servings.

I never used parsnips much in the past,but have tried a couple of recipes,and when cooked they kind of take on a slight sweetness.

I will give this recipe a whirl,thank-you.
