Gingerbread Squares

- 1/2 cup plus 2 tbs butter or margarine, divided shopping list
- 1/2 cup corn syrup shopping list
- 1/2 cup walnut halves or pieces shopping list
- 1 large pear or apple, cored and chopped shopping list
- 1/2 cup sugar shopping list
- 3/4 cup molasses shopping list
- 2 eggs shopping list
- 2 cups all-purpose flour shopping list
- 1/2 tsp each, baking powder and baking soda shopping list
- 1/2 tsp each, ground ginger and cinnamon shopping list
- 1/4 tsp each, salt and ground cloves shopping list
- 1/2 cup buttermilk shopping list
How to make it
- Combine 2 tbs butter and corn syrup in small saucepan. Cook over medium heat until butter is melted and syrup is hot, stirring frequently. Pour into 9" square baking dish. Sprinkle walnuts and chopped pear evenly over syrup.
- Beat together 1/2 cup butter and sugar until light and fluffy. Gradually beat in molasses. Add eggs, one at a time, beating well. Combine flour, baking powder, soda, ginger, cinnamon, salt and cloves in a medium bowl; mix well. Add flour mixture alternately with buttermilk to molasses mixture, beating well. Pour over pear mixture in dish. Bake in a 350ยบ oven for 50 to 55 mins or til a wooden pick inserted in center comes out clean.
- Transfer to cooling rack; let stand 10 mins. Loosen edges and turn out onto a serving plate; cool at least 15 mins. Serve warm or at room temperature. Makes 8 to 10 servings.
