How to make it

  • Combine butter, onions mayo, parmesan, tabasco and worcestershire in bowl.
  • Mix thoroughly.
  • Poach fillets in skillet of simmering water for about 3-4 minutes.
  • Remove with slotted spatula to drain.
  • Place fillets in single layer in shallow baking dish.
  • Spread mayo mixture over each filet.
  • Sprinkle cheddar cheese over all filets.
  • Broil 2-3 minutes or until cheese is lightly browned and fish flakes easily with a fork.
  • Spoon pan juices over each filet to serve.

    Never heard of walleye(!), but this sounds like a great way to prepare cod, or flounder, or tilapia, or whatever else we have in the freezer! Looking forward to trying it, thanks.
