Ingredients
  • 6 to 8 walleye fillets
  • 6 tablespoons mayonnaise
  • 3/4 C. finely chopped green onions
  • 1/2 C. freshly grated parmesan cheese
  • 1/2 C. butter
  • 1 t. worcestershire sauce
  • 3 - 4 drops Tabasco sauce
  • 1/2 C. freshly shredded cheddar cheese

Directions
  1. Combine butter, onions mayo, parmesan, tabasco and worcestershire in bowl.
  2. Mix thoroughly.
  3. Poach fillets in skillet of simmering water for about 3-4 minutes.
  4. Remove with slotted spatula to drain.
  5. Place fillets in single layer in shallow baking dish.
  6. Spread mayo mixture over each filet.
  7. Sprinkle cheddar cheese over all filets.
  8. Broil 2-3 minutes or until cheese is lightly browned and fish flakes easily with a fork.
  9. Spoon pan juices over each filet to serve.

Never heard of walleye(!), but this sounds like a great way to prepare cod, or flounder, or tilapia, or whatever else we have in the freezer! Looking forward to trying it, thanks.
