Caramelized Onion And Blue Cheese Pizza Recipe

Pizza with sweet caramelized onions and blue cheese. Yummy.

Ingredients
- 1 recipe Sweet Caramelized Onions,divided(posted)
- 1 recipe quick pizza dough(posted)
- 6 oz. pancetta
- 3T olive oil
- 1/4c blue cheese,crumbled,divided
- 1t. minced fresh rosemary,divided
Directions
- Preheat oven to 500 with baking stone on the lowest rack.
- Prepare onions and dough;cover dough till ready to use.
- Saute pancetta in 1Tbs oil in skillet over med-high until crisp,about 8 mins;drain on paper toel lined plate. Roll dough and place on peel. Brush with additional oil.
- Top dough with 1/4 ea. of the onions,pancetta,blue cheese and rosemary. Slide pizza from peel onto stone and bake till cheese melts and edges begin to brown,8-10 mins;remove from oven and slice into 8 wedges. Assemble and bake remaining pizzas in the same manner.
