Copycat--carrabbas Chicken Bryan Texas Recipe
My husband always orders this dish at Carrabba's; I found this one and made it last night with rave reviews!

Ingredients
  • 1 Tablespoon minced yellow onion
  • 1 Tablespoon minced garlic--- I used more onion and a clove of garlic
  • 2 Tablespoons REAL butter
  • ½ cup dry white wine—something you would drink
  • ¼ cup fresh lemon juice
  • 2/3 cup cold butter sliced—I used 1/3 cup chicken stock and 1/3 cup butter
  • 1 ½ cup chopped sun-dried tomatoes—only had 1 cup
  • ¼ cup chopped fresh basil
  • ½ teaspoon kosher salt
  • ½ teaspoon white pepper
  • 6 boneless chicken breast—I pounded mine to same thickness
  • Extra virgin olive oil for brushing chicken breast
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 ounces Caprino goat cheese or other goat cheese, room temperature.

Directions
  1. 1. Saute onion and garlic in two tablespoons butter in a large skillet over medium heat until tender.
  2. 2. Stir in wine and lemon juice; increase heat to medium high and reduce by half.
  3. 3. Reduce to low heat and stir in cold butter slice at a time. I alternated between the stock and butter.
  4. 4. Stir in chopped sun dried tomatoes, basil, kosher salt and white pepper; remove from heat and set aside.
  5. 5. Bruch chicken breast with olive oil and sprinkle with the salt and black pepper.
  6. 6. Grill over medium heat until cooked through.
  7. 7. A couple of minutes before chicken is done, place equal amounts of cheese on each breast. Spoon prepared sauce over chicken.

Being a dense Downunder Aussie ,does the caprino mean real goat cheese ,what I might csall Chevre like the French ?? I assume it does ,and this is definitley getting a start at my place --delish dish !!
