How to make it

  • 1. Saute onion and garlic in two tablespoons butter in a large skillet over medium heat until tender.
  • 2. Stir in wine and lemon juice; increase heat to medium high and reduce by half.
  • 3. Reduce to low heat and stir in cold butter slice at a time. I alternated between the stock and butter.
  • 4. Stir in chopped sun dried tomatoes, basil, kosher salt and white pepper; remove from heat and set aside.
  • 5. Bruch chicken breast with olive oil and sprinkle with the salt and black pepper.
  • 6. Grill over medium heat until cooked through.
  • 7. A couple of minutes before chicken is done, place equal amounts of cheese on each breast. Spoon prepared sauce over chicken.

    Being a dense Downunder Aussie ,does the caprino mean real goat cheese ,what I might csall Chevre like the French ?? I assume it does ,and this is definitley getting a start at my place --delish dish !!

    Sounds great - I lived in Bryan for 14 yrs, both my kids were born there...other family members there too...never been to Carrabba's, but it's on my list..."Ciao Ya'll!"...love the commercial...thanks for a great post!
