- 1 Tablespoon minced yellow onion shopping list
- 1 Tablespoon minced garlic--- I used more onion and a clove of garlic shopping list
- 2 Tablespoons REAL butter shopping list
- ½ cup dry white wine—something you would drink shopping list
- ¼ cup fresh lemon juice shopping list
- 2/3 cup cold butter sliced—I used 1/3 cup chicken stock and 1/3 cup butter shopping list
- 1 ½ cup chopped sun-dried tomatoes—only had 1 cup shopping list
- ¼ cup chopped fresh basil shopping list
- ½ teaspoon kosher salt shopping list
- ½ teaspoon white pepper shopping list
- 6 boneless chicken breast—I pounded mine to same thickness shopping list
- extra virgin olive oil for brushing chicken breast shopping list
- ½ teaspoon salt shopping list
- ½ teaspoon black pepper shopping list
- 8 ounces Caprino goat cheese or other goat cheese, room temperature. shopping list
How to make it
- 1. Saute onion and garlic in two tablespoons butter in a large skillet over medium heat until tender.
- 2. Stir in wine and lemon juice; increase heat to medium high and reduce by half.
- 3. Reduce to low heat and stir in cold butter slice at a time. I alternated between the stock and butter.
- 4. Stir in chopped sun dried tomatoes, basil, kosher salt and white pepper; remove from heat and set aside.
- 5. Bruch chicken breast with olive oil and sprinkle with the salt and black pepper.
- 6. Grill over medium heat until cooked through.
- 7. A couple of minutes before chicken is done, place equal amounts of cheese on each breast. Spoon prepared sauce over chicken.
