This is a delicious unique risotto incorporating papaya

Ingredients
  • 1 cup arborio rce
  • 2 cups boiling chicken or vegetable stock
  • 2 sha;;ots diced
  • 2 Tbs fresh chopped garlic
  • 1/8 cup white wine
  • 2 tbs grated parmesan cheese
  • 6 oz butter butter
  • salt and pepper
  • 1 cup or more Fresh papaya chunks

Directions
  1. Melt 3 ozbuuter and add shallots to soften and then add garlic
  2. Add rice and cook 2 minutes.
  3. Stir in wine.
  4. Add boiling stock, 1/2 cup at a time stiring frequently to gradually aborb all stock ( about 20 minutes ).
  5. Add remainder of butter, cheese and salt and pepper to taste.
  6. Lastly add fresh papaya chunks and let sit 5 minutres before serving
  7. Garnish with some fresh chopped chives for color

I am going to have to try this - I love risotto, and I love papaya...maybe as a side to seared scallops.
