Ingredients

How to make it

  • Melt 3 ozbuuter and add shallots to soften and then add garlic
  • Add rice and cook 2 minutes.
  • Stir in wine.
  • Add boiling stock, 1/2 cup at a time stiring frequently to gradually aborb all stock ( about 20 minutes ).
  • Add remainder of butter, cheese and salt and pepper to taste.
  • Lastly add fresh papaya chunks and let sit 5 minutres before serving
  • Garnish with some fresh chopped chives for color

    I am going to have to try this - I love risotto, and I love papaya...maybe as a side to seared scallops.
