Papaya Risotto

- 1 cup arborio rce shopping list
- 2 cups boiling chicken or vegetable stock shopping list
- 2 sha;;ots diced shopping list
- 2 Tbs fresh chopped garlic shopping list
- 1/8 cup white wine shopping list
- 2 tbs grated parmesan cheese shopping list
- 6 oz butter butter shopping list
- salt and pepper shopping list
- 1 cup or more Fresh papaya chunks shopping list
How to make it
- Melt 3 ozbuuter and add shallots to soften and then add garlic
- Add rice and cook 2 minutes.
- Stir in wine.
- Add boiling stock, 1/2 cup at a time stiring frequently to gradually aborb all stock ( about 20 minutes ).
- Add remainder of butter, cheese and salt and pepper to taste.
- Lastly add fresh papaya chunks and let sit 5 minutres before serving
- Garnish with some fresh chopped chives for color
