Pasta Verde

- 8 slices bacon shopping list
- 10 ounces spaghetti or other pasta of choice shopping list
- 1 10-oz. packagen frozen chopped spinach shopping list
- 2 cloves garlic, minced shopping list
- 1/8 t. pepper shopping list
- 1/2 C. small curd cottage cheese shopping list
- 1/2 C. freshly grated parmesan cheese shopping list
How to make it
- Cook bacon in skillet until crisp and drain, reserving 2 T. bacon drippings.
- Crumble bacon and set aside.
- Cook pasta according to directions in boiling water.
- Meanwhile, in a med. saucepan cook spinach according to package directions.
- Place UNDRAINED spinach, reserved bacon drippings, garlic and pepper in blender or food processor.
- Cover and blend until smooth.
- Add the cottage cheese, cover and blend till smooth.
- Drain pasta and place on large serving platter or in large bow.
- Pour spinach mixture over pasta and toss.
- If using as a side dish place individual servings on salad plate.
- Sprinkle servings with bacon and Parmesan cheese.
- Serve immediately.
