A quick and colorful side dish full of flavor. It goes well with chicken, but I often just eat this for a light meal or lunch with a good crusty bread.

Ingredients
  • 8 slices bacon
  • 10 ounces spaghetti or other pasta of choice
  • 1 10-oz. packagen frozen chopped spinach
  • 2 cloves garlic, minced
  • 1/8 t. pepper
  • 1/2 C. small curd cottage cheese
  • 1/2 C. freshly grated parmesan cheese

Directions
  1. Cook bacon in skillet until crisp and drain, reserving 2 T. bacon drippings.
  2. Crumble bacon and set aside.
  3. Cook pasta according to directions in boiling water.
  4. Meanwhile, in a med. saucepan cook spinach according to package directions.
  5. Place UNDRAINED spinach, reserved bacon drippings, garlic and pepper in blender or food processor.
  6. Cover and blend until smooth.
  7. Add the cottage cheese, cover and blend till smooth.
  8. Drain pasta and place on large serving platter or in large bow.
  9. Pour spinach mixture over pasta and toss.
  10. If using as a side dish place individual servings on salad plate.
  11. Sprinkle servings with bacon and Parmesan cheese.
  12. Serve immediately.
