Ingredients

How to make it

  • Mix chicken, cornstarch and ¼ teaspoon salt.
  • Heat wok or large skillet until hot.
  • Add 1 Tbl oil (use to coat pan)
  • Add eggs: cook and stir until eggs are chickened through but still moist.
  • Remove eggs from pan.
  • Add 2 tablespoons oil (coat bottom and sides)
  • Add chicken, water chestnuts, mushrooms mixed vegetables, and ½ teaspoon salt
  • Stir fry 1 minute.
  • Remove from pan.
  • Add 2 tablespoons oil (coat bottom and sides)
  • Add rice; stir-fry 1 minute.
  • Stir in soy sauce.
  • Add chicken mixture, eggs, green onion and white pepper.
  • Stir-fry 30 seconds.
