Orange Cappuccino Quick Bread

- 1 medium orange shopping list
- 2/3 cup half-and-half shopping list
- 1 tablespoon instant coffee granules or instant espresso powder shopping list
- 2 cups all-purpose flour shopping list
- 1 cup firmly-packed light brown sugar shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon cinnamon shopping list
- 1/4 teaspoon salt shopping list
- 1/2 cup vegetable or canola oil shopping list
- 2 large eggs shopping list
- 2 teaspoons vanilla extract shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease (or spray with nonstick cooking spray) one 8 x 4-inch loaf pan.
- If greasing pan, dust with flour and tap out excess.
- On a cutting board or plate, remove peel from orange.
- In a medium saucepan, heat half-and-half over high heat just until it bubbles around the edge of pan.
- Remove from heat.
- Stir in orange peel and instant coffee or espresso powder.
- Let stand for 10 minutes.
- Discard peel.
- In a large mixing bowl, mix together flour, brown sugar, baking powder, cinnamon, and salt.
- Set this mixture aside.
- Stir together coffee mixture, oil, eggs, and vanilla in a separate small mixing bowl.
- Make a "well" in the center of the flour mixture.
- Add the coffee mixture all-at-once to the well, tossing with a fork just until dry ingredients are moistened.
- (Do not over-mix.)
- Spoon batter into prepared loaf pan.
- Bake in preheated oven until a toothpick inserted into center comes out clean--approximately 60 to 65 minutes.
- Carefully remove from oven and place on hot pad on counter top to cool slightly.
- Loosen loaf by running spatula or knife around sides of pan.
- Turn loaf out onto baking rack to cool.
