This is a absolutely wonderful recipe that I wanted to try to figure out from when we went to Gatlinburg a few years back. I finally got it right.

I tried this for Christmas and everyone loved it. The fudge had a great coconut flavor and a creamy texture. It was delicious on it's own, but would be good with some chopped toasted almonds or macadamia nuts, too. I put it in an 8-inch square pan (as I do all my fudge) and there was enough that it would fit in a 9-inch pan, too - which would give you more pieces. Great recipe! I hope you don't mind; I posted a picture of the finished fudge. Thanks again! - Natalie
