How to make it

  • Soak dried Hijiki in cold water for 1/2 hour - will increase about 10 times in size so be sure to use a big enough bowl.
  • Soak mushrooms in warm water for about 15-20 minutes.
  • Toast sesame seeds for about 5 minutes in a dry pan and set aside.
  • Pour soy sauce, vinegar, mirin,sugar and dashi in a measuring cup.
  • Fill the rest of the cup with water.
  • Drain and rinse seaweed.
  • Remove mushrooms from water. Cut off stems and slice.
  • Place all ingredients including liquids in a medium sauce pan and cook on medium heat until all the liquid is gone, stirring occassionally- about 20 minutes.
  • Sprinkle with toasted sesame seeds.
