Ingredients
  • Dried hijiki (seaweed)
  • dried shitake mushrooms
  • sesame seeds
  • 1 TBSP low sodium soy sauce (shoyu in japanese)
  • 1 TBSP rice vinegar
  • 1 TBSP sugar
  • 1 TSP mirin (sweet japanese wine)
  • 1 TBSP dashi powdered soup mix (available at japanese grocery)
  • water
  • frozen edamame beans (not in the shell)

Directions
  1. Soak dried Hijiki in cold water for 1/2 hour - will increase about 10 times in size so be sure to use a big enough bowl.
  2. Soak mushrooms in warm water for about 15-20 minutes.
  3. Toast sesame seeds for about 5 minutes in a dry pan and set aside.
  4. Pour soy sauce, vinegar, mirin,sugar and dashi in a measuring cup.
  5. Fill the rest of the cup with water.
  6. Drain and rinse seaweed.
  7. Remove mushrooms from water. Cut off stems and slice.
  8. Place all ingredients including liquids in a medium sauce pan and cook on medium heat until all the liquid is gone, stirring occassionally- about 20 minutes.
  9. Sprinkle with toasted sesame seeds.
