Hijiki No Nimono

- Dried hijiki (seaweed) shopping list
- dried shitake mushrooms shopping list
- sesame seeds shopping list
- 1 TBSP low sodium soy sauce (shoyu in japanese) shopping list
- 1 TBSP rice vinegar shopping list
- 1 TBSP sugar shopping list
- 1 TSP mirin (sweet japanese wine) shopping list
- 1 TBSP dashi powdered soup mix (available at japanese grocery) shopping list
- water shopping list
- frozen edamame beans (not in the shell) shopping list
How to make it
- Soak dried Hijiki in cold water for 1/2 hour - will increase about 10 times in size so be sure to use a big enough bowl.
- Soak mushrooms in warm water for about 15-20 minutes.
- Toast sesame seeds for about 5 minutes in a dry pan and set aside.
- Pour soy sauce, vinegar, mirin,sugar and dashi in a measuring cup.
- Fill the rest of the cup with water.
- Drain and rinse seaweed.
- Remove mushrooms from water. Cut off stems and slice.
- Place all ingredients including liquids in a medium sauce pan and cook on medium heat until all the liquid is gone, stirring occassionally- about 20 minutes.
- Sprinkle with toasted sesame seeds.
