Great Pumpkin Cookie Recipe

As the weather starts cooling down, I make a batch of these cookies. Not overpowering in the pumpkin taste but with a touch of chocolate, it compliments the cookie. Great with a cup of coffee or a glass of milk.

Ingredients
  • 2 cups of flour
  • 1 cup of oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 jumbo egg, slightly beaten
  • 1 teaspoon vanilla
  • 1 cup pumpkin
  • 1 cup chocolate chips (I use semi-sweet)

Directions
  1. In a seperate bowl, combine your dry ingredients.
  2. Cream butter then add sugars.
  3. Add egg and vanilla.
  4. Add your pumpkin.
  5. Add in your dry ingredients and mix.
  6. Add in your chocolate chips.
  7. I use parchment paper on my cookie sheets.
  8. Drop by spoonfuls (I make the cookies bigger than normal size)
  9. Bake at 350 degrees for 20-25 minutes.
  10. If you choose to make cookies smaller, watch the time.
  11. Hope you enjoy.
