Potatoes Baked With Creamy Eggs Recipe
This is a delicious side dish.

Ingredients
  • 2-1/2 tablespoons butter, melted
  • 4 cups potatoes, cooked and diced,
  • salt and pepper to taste
  • 4 eggs, beaten
  • 2 cups sour cream
  • 3 Tbsp. chopped chives or spring onions
  • I like to top this dish with crumbled crispy bacon after I have removed it from the oven.

Directions
  1. Preheat oven to 350°F.
  2. Drizzle butter into the bottom of an oven proof casserole dish.
  3. Add cooked potatoes and season with salt and pepper.
  4. Mix together, eggs and sour cream.
  5. Add chives/spring onions to the mixture and pour over potatoes.
  6. Cover and bake in a preheated 350°F oven for 50 minutes.
