Ingredients
  • 4 skinned, boneless chicken breasts
  • 1 sleeve Ritz crackers, processed into crumbs
  • 1 stick margarine OR 1 egg OR 1 c sour cream

Directions
  1. Crumble or process one sleeve Ritz cracker into fine crumbs.
  2. Dip chicken in your choice of melted margarine, lightly whipped egg or egg white, or sour cream.
  3. Roll chicken in cracker crumbs.
  4. Place on baking sheet (use parchment paper for easy clean-up).
  5. Bake, uncovered, at 350F for one hour.
  6. This recipe is also good with Cheez-Its, or a combination of cracker crumbs.
  7. I often use tenderloins; bake approx 25 minutes.
  8. For a thick crumb crust, roll in crumbs, place in refrigerator for approx 30 min, dip a second time and re-roll in crumbs.

One of my coworkers was telling me she did this to chicken a few months ago and that it was absolutely fantastic. She said she'd never bread chicken with anything but Ritz after that. Thanks for reminding me that I wanted to try it!


If you like cheese flavor, try the Cheez-Its mixed in-I was low on Ritz and added a handful-it was excellent. I like the mixture better than just Cheez-Its. Is good nugget-sized, too. Hope you like it. You can just wet the chicken if you want to save calories-the crumbs don't hold as well, though.
