Shrimp And Dill Deviled Eggs Recipe
One of two deviled egg versions that are a nice change from the original. This one features the tastes of shrimp and dill; a great combo.

Ingredients
  • 6 eggs, boiled and peeled
  • 1/4 c. mayonnaise
  • 1 - 4.5 oz. can tiny or baby shrimp, rinsed and drained
  • 2 TBSP. scallions (green onions), chopped
  • 1 TBSP. fresh dill weed, chopped
  • 1 TBSP. lime juice
  • 2 tsp. prepared Dijon mustard
  • 1/4 tsp. hot pepper sauce (like Tabasco)
  • pinch fresh ground black pepper
  • fresh dill weed, for garnish
  • additional baby shrimp, for garnish (optional)

Directions
  1. Slice eggs in half lengthwise, remove yolks. Set aside whites.
  2. In a medium bowl, mash egg yolks with a fork. Mix in remaining ingredients, except garnish.
  3. Spoon approximately 1 TBSP. egg yolk mixture into each egg white. Garnish with fresh dill weed and additional baby shrimp (if desired). Refrigerate until serving.
  4. Serves 6, two halves each.
