  • Country Cornmeal Drop Biscuits
  • INGREDIENTS
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons cold butter
  • 2 tablespoons canned green chilies, chopped
  • 2 tablespoons canned pimiento peppers, chopped
  • 1 egg, beaten
  • 1/2 cup milk

  • optional: (for top)
  • 1/2 tsp poppy seeds
  • 1/2 tsp sesame seeds
  • In a mixing bowl, combine the flour, cormeal, sugar, baking powder, and salt. Cut in the butter until the mixture is crumbly. Add the chilies and pimientos.
  • Stir in the beaten egg and milk, just until combined.
  • Drop by large spoonfuls, about 2 tablespoons each, onto an oiled baking sheet. Bake the biscuits in a 450 degree oven for 13 to 15 minutes.
  • OPTIONAL (BUT GOOD)
  • Brush tops of biscuits with egg white. Combine poppy seeds and sesame seeds in a small bowl, and sprinkle seed mixture evenly over biscuit tops.

Directions
  1. Good with lots a' real butter..!! :)
