Ingredients

2 cups cooked chicken (Chopped)

4-5 cups chicken broth

1 can stewed tomatoes

1 can rotel tomatoes (or 1/2 cup salsa)

1 can whole kernel corn

2-3 corn tortillas (diced or torn in small pieces)

1/2 large onion (diced)

1 tablespoon cilantro

1 can chopped chili peppers

1/2 teaspoon cumin or chili powder

dash of cayenne pepper (optional)

1-2 cloves garlic

Directions

Saute gralic, onions, tortillas and cilantro.

Add chicke, broth, corn, tomatoes and spices.

Bring to a boil.

Reduce heat and simmer to reduce to desired thickness.

I started making tortilla soup recently and I'm hooked on it! This is very similar to the one I make. I add sour cream and shredded cheddar on top. So good!
