How to make it

  • Place the eggs in a saucepan and cover with cold water
  • Cook over high heat and bring to a boil
  • Boil the eggs for exactly 4 minutes, remove from heat & let sit 10 before
  • draining. Run under cold water and peel immediately, shells slide off.
  • Using box grater,shredder side grate eggs into a bowl
  • Add salmon, dill, capers and 1/4 cup mayo, salt & pepper, mix well
  • Lay out 7 slices of bread and spread 1/4 cup of egg salad on each.
  • Cover with remaining bread slices. Of course trim crust off all slices.
  • Cut each sandwich into triangles. Spread long side with remaining mayo and dip in chopped chives. Enjoy!
