Dilled Egg And Smoked Salmon Tea Sanwiches Recipe
Lovely tea sandwich for appetizer or 1 of a high tea lunch and so pretty

Ingredients
  • 6 eggs
  • 2 oz. smoked salmon, finely chopped
  • 2 tsp. chopped dill
  • 2 tsp. small capers
  • 1/4 cup plus 2 tblsp. mayo
  • 1 tsp. sea salt
  • 1/2 tsp. black pepper
  • 14 slices good bakery white bread
  • chopped chives for garnish

Directions
  1. Place the eggs in a saucepan and cover with cold water
  2. Cook over high heat and bring to a boil
  3. Boil the eggs for exactly 4 minutes, remove from heat & let sit 10 before
  4. draining. Run under cold water and peel immediately, shells slide off.
  5. Using box grater,shredder side grate eggs into a bowl
  6. Add salmon, dill, capers and 1/4 cup mayo, salt & pepper, mix well
  7. Lay out 7 slices of bread and spread 1/4 cup of egg salad on each.
  8. Cover with remaining bread slices. Of course trim crust off all slices.
  9. Cut each sandwich into triangles. Spread long side with remaining mayo and dip in chopped chives. Enjoy!
