This was one of my favorite dishes my Grandmother made for easy Sunday dinners. It's still one of my favorite comfort food dishes, I think of her whenever I make it. Enjoy!

Ingredients
  • 1 3-1/2 lb. chuck roast
  • 4 medium sized potatoes, peeled and cut into quarters
  • 5 large carrots, peeled, halved and cut into large pieces
  • 4 small cooking onions, peeled and halved
  • 5 parsnips, peeled, halved and cut into large pieces
  • Salt & Pepper to cover roast
  • 1 Cup of beef broth
  • 2 Cans of beefy mushroom soup

Directions
  1. Pre-heat oven to 350 F.
  2. Rinse and pat dry chuck roast, sprinkle salt and pepper over roast to coat to your own tastes.
  3. Place in a dutch oven and add beef broth and prepped veggies.
  4. Cover and bake for 2-1/2 hours in oven.
  5. Add beefy mushroom soup over contents of pan, re-cover and bake for another hour or until veggies are fork tender.
  6. Remove pan and let rest for 15 minutes.
  7. Serve on a warm platter with veggies surrounding roast, reserve gravy for the gravy boat and serve with warm dinner rolls and a tossed salad.
  8. Enjoy!

Sounds soooooo good!


I got stock on the back burner right now - might as well make your recipe into a yummy stew. Gotta go to the store anyway for medicine so I can pick up what I don't have then.


Hi Laura.Sounds like a great dish!Did you ever notice that when the word "Grandma" is in a recipe,it always turns out to be a big hit? Nobody cooks like dear old Grandma,I guess.Will have to try this soon.

Looks delish! Adding a little horseradish gives it a good flavor, also.
