Pork Piccata

- 8 thin boneless pork cutlets(about 11/2-2lbs shopping list
- 1/4tsp salt shopping list
- 1/4tsp black pepper shopping list
- 1/2c flour shopping list
- 2Tbs olive oil shopping list
- 1c chicken broth shopping list
- 3Tbs capers shopping list
- 2Tbs lemon juice shopping list
- 1Tbs butter shopping list
How to make it
- Season both sides of pork with salt and pepper. Dredge in flour and shake off excess. Discard remaining flour
- Heat oil in a large skillet over med-high heat. Add poek and saute for 2 mins per side. Remove pork to a plate and keep warm.
- Add broth and simer 2 mins,scraping up any browned bits from bottom of skillet. Stir in the capers and lemon juice. Return the pork to the skillet and simmer gently for about 1-2 mins,until the pork is heated thru. Whisk in the butter.
