Pork Piccata Recipe
Nice version of piccata done with pork cutlets. Great with mashed potatoes and peas.Lemon wedges and chopped parsley for garnish

Ingredients
  • 8 thin boneless pork cutlets(about 11/2-2lbs
  • 1/4tsp salt
  • 1/4tsp black pepper
  • 1/2c flour
  • 2Tbs olive oil
  • 1c chicken broth
  • 3Tbs capers
  • 2Tbs lemon juice
  • 1Tbs butter

Directions
  1. Season both sides of pork with salt and pepper. Dredge in flour and shake off excess. Discard remaining flour
  2. Heat oil in a large skillet over med-high heat. Add poek and saute for 2 mins per side. Remove pork to a plate and keep warm.
  3. Add broth and simer 2 mins,scraping up any browned bits from bottom of skillet. Stir in the capers and lemon juice. Return the pork to the skillet and simmer gently for about 1-2 mins,until the pork is heated thru. Whisk in the butter.
