Ingredients
  • Vegetables:
  • 1 head cabbage 2 lbs.
  • medium onion, diced
  • 1 can tomatoes , 1 lb. 12 oz.
  • Meatballs:
  • 1 lb chopped or ground beef or turkey (I use turkey)
  • 1/2 tsp salt
  • 1/2 tsp.sugar
  • 1 Tbsp. ketchup
  • pepper, freshly ground
  • Additional ingredients
  • juice of 1/2 lemon (fresh)
  • 1 tsp. sugar
  • 4-5 gingersnaps, crumbled

Directions
  1. Wash, quarter and shred head of cabbage,
  2. and arrange in bottom of deep pot with cover.
  3. Add onion and tomatoes, drained. Save juice .
  4. Top with meatballs made by mixing the meat, salt and sugar , ketchup and a twist of the pepper grinder.
  5. Add enough tomato juice to cover cabbage and meat.
  6. Add the lemon juice , 1 tsp sugar and gingersnaps over all, and cover and simmer 1-2 hours, stirring from time to time.
  7. Double recipe for a crowd.

Oh, those gingersnaps--very very Euro. My grandmother always used raisins and tomatoes (providing the acid), but these would certainly do the job ;--)


One of my favorite dishes ever....love the gingersnap addition.


I was thinking about making this yesterday. Do not have gingersnaps, and will sub something else. all I can think of is gingerroot--any suggestions?
