Ingredients

How to make it

  • In food processor, puree 1 package of partially thawed corn, with all the butter EXCEPT 1 tablespoon
  • Pour into large bowl, fold in other package of corn
  • Add the unbeaten eggs, sour cream, combine well
  • In another bowl, combine the cornmeal, grated cheese, chilies and garlic
  • Season with salt and pepper
  • Combine the cornmeal mixture with the corn mixture
  • Mix well
  • With the remaining 1 tablespoon of butter, grease a 2 or 3 quart casserole
  • Pour in the corn mixture
  • Bake for about 1 hour until lightly brown and puffy
  • Serve immediately

    OH YES! I'm so in love with corn right now and this sounds right up my alley. In fact, I'm making a Creamy Corn Chowder as part of my mom's b-day dinner tomorrow.
