Baked Penne With Italian Sausage And Spinach Recipe
Love this baked penne! You can use ground beef or ground turkey as well. Great with some crusty bread and a salad!

Ingredients
  • 1 lb. dry tubular pasta, cooked
  • 1 T olive oil
  • 2-3 pinches kosher salt
  • 1/4 c olive oil
  • 1 cup mushrooms
  • 1 cup spinach, chopped
  • 1 cup Italian sausage, cooked
  • 1 cup sliced black olives
  • 2 cups spaghetti sauce
  • 2 cups shredded cheese, I use Italian Blend, divided

Directions
  1. Cook pasta in boiling water with kosher salt and 1T olive oil
  2. Drain, rinse with cold water, toss with 1/4 cup oil and set aside.
  3. Saute Italian sausage and mushrooms.
  4. Chop spinach.
  5. In a large bowl mix all ingredients except 1 c of the shredded cheese together until well coated.
  6. Place mixed ingredients in a 3qt baking dish.
  7. Cover with remaining shredded cheese.
  8. Bake in a 375 degree oven for 20 minutes or until cheese is melted and starting to brown.
  9. Allow to cool 5 minutes before serving.
