Broiled Tilapia with Sweet Potato Crust and Vanilla Cream Sauce

- 2 (6 ounce size ) tilapia fillets shopping list
- ****FILLING**** shopping list
- 3 sweet potatoes - cooked & peeled shopping list
- 3 teaspoons fresh lemon juice shopping list
- 4 teaspoons fresh orange juice shopping list
- 1 Tablespoon butter shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon minced ginger shopping list
- ***CRUST*** shopping list
- 3 graham crackers shopping list
- 1 cup roasted pecans shopping list
- 2 Tablespoons melted butter shopping list
- **SAUCE** shopping list
- 5 Tablespoons heavy cream shopping list
- 1 Tablespoon vanilla shopping list
- 2 Tablespoons fish stock OR water shopping list
- 1 pinch of seafood or creole seasoning shopping list
How to make it
- Grind sweet potatoes, juices, butter, salt and ginger together and set aside.
- Grind the graham crackers, pecans and butter together.
- Cover the fish with the sweet potatoe mixture. Then sprinkle the pecan mixture over the top
- Broil the fillets until golden brown...approx. 4 minutes
- In a small skillet, add the cream, vanilla, stock and seasoning.
- Bring to a boil and cook for a minute, until the alcohol in the vanilla is gone and the sauce coats the back of the spoon
- Pool the sauce on a plate.
- Place the broiled fish fillet on top and serve.
