  • 3/4 cup packed dark brown sugar
  • 3/4 cup softened unsalted butter
  • 1 large egg
  • 3/4 cup unsulfured blackstrap molasses
  • 2 3/4 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon freshly ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1 tsp vanilla extract
  • 1/4 teaspoon cardamom (optional)

Directions
  1. Preheat oven to 325 degrees and lightly grease the cookie sheets. In a large bowl cream together the brown sugar and butter until creamy. Beat in the egg and molasses until light and creamy.
  2. Whisk together the dry ingredients in a medium bowl. Add the dry ingredients slowly to the butter mixture.
  3. Drop by teaspoonsful onto the prepared sheets 2 inches apart (I like to sprinkle with some sugar before baking) and bake for 8-10 minutes or until set. Cookies should not brown. Cool on the baking sheet for 3 minutes, then transfer to a wire rack.
  4. Store in an airtight container, or wrap well and freeze.

Does the molasses give it a certain flavor?
also, can i add cocoa to it instead of spices?


Just made these and they are totally awesome! The next time I make them, I may a cream cheese frosting on them ( kept them rounded)


Great cookie!! With summer coming, I go a bit beyond the norm with this recipe. Please see alteration, but you do NOT have to change this cookie. Perfect by itself.

Alterations


For a cold summer treat, take one cookie and spread a good layer of chocolate ganache. Now make a sandwich with a second cookie but place a popsicle stick between the layers, and freeze. Dip the cookies in melted chocolate(your preference) and cool in fridge. Kids and adults love 'em!!!
