Calamari Casserole Recipe
A slow cooked Calamari dish that is great to serve from the pot on the dining table, a good easy meal amongst friends

Ingredients
  • 2 whole calamari
  • 1 800g tin of tomatoes
  • 2 medium brown onions (chopped)
  • 2-3 cloves of Garlic (smashed and sliced)
  • 1 green capsicum (chopped roughly):
  • 2 spring onions
  • 1 small red chilli, with seeds.
  • Chicken Stock
  • Spices:
  • Cumin seeds
  • Hot Paprika
  • Pepper
  • Salt
  • Corriander powder
  • Cajun seasoning

Directions
  1. Prepare Calamari if you have bought it whole, it is more fun to buy it whole and do this, it makes you appreciate the meal more.
  2. Heat oven to 180 celsius
  3. Slice calamari body into 1/4 inch wide tubes
  4. Slice tentacles into 1 1/2 inch long lengths, marinate tentacles in bowl of lemon juice, pepper and salt for at least 1hr.
  5. In a dutch oven on stove:
  6. Fry onions till soft
  7. Add garlic and capsicum
  8. Add spices, and stir through, season to taste
  9. Add tomatoes and refill can with water and add this too.
  10. Add a squeeze of lemon and a generous dose of pepper.
  11. Place calamari rings into the dutch oven stir through to make sure they are covered in enough liquid, place on lid and put in oven for 45 minutes
  12. Once the 45 minutes is up, mix spring onions and chilli with the tentacles, fry for 3-4 minutes adding the marinade as you fry them.
  13. Serve with steamed rice and tentacles on the side

Thanks, I sort of morphed a few different recipe's and flavours into this. I had some calamari that needed cooking and I had people coming around, this was the result. An impromptu delight
