Calamari Casserole

- 2 whole calamari shopping list
- 1 800g tin of tomatoes shopping list
- 2 medium brown onions (chopped) shopping list
- 2-3 cloves of garlic (smashed and sliced) shopping list
- 1 green capsicum (chopped roughly): shopping list
- 2 spring onions shopping list
- 1 small red chilli, with seeds. shopping list
- chicken stock shopping list
- Spices: shopping list
- cumin seeds shopping list
- hot paprika shopping list
- pepper shopping list
- salt shopping list
- Corriander powder shopping list
- cajun seasoning shopping list
How to make it
- Prepare Calamari if you have bought it whole, it is more fun to buy it whole and do this, it makes you appreciate the meal more.
- Heat oven to 180 celsius
- Slice calamari body into 1/4 inch wide tubes
- Slice tentacles into 1 1/2 inch long lengths, marinate tentacles in bowl of lemon juice, pepper and salt for at least 1hr.
- In a dutch oven on stove:
- Fry onions till soft
- Add garlic and capsicum
- Add spices, and stir through, season to taste
- Add tomatoes and refill can with water and add this too.
- Add a squeeze of lemon and a generous dose of pepper.
- Place calamari rings into the dutch oven stir through to make sure they are covered in enough liquid, place on lid and put in oven for 45 minutes
- Once the 45 minutes is up, mix spring onions and chilli with the tentacles, fry for 3-4 minutes adding the marinade as you fry them.
- Serve with steamed rice and tentacles on the side
