Tomato Pasta With Marscapone Cheese Recipe
Marscarpone cheese, basil and tomato are combined for a reich creamy sauce with bowtie pasta! Simple, but fabulous!

Ingredients
  • 2/3 lb farfalle pasta (bowties)
  • 1 (8oz) can whole peeled tomatoes .
  • 1 oz butter
  • 1 Tbsp Extra virgin olive oil
  • 1 small white onion , minced
  • 3 oz mascarpone cheese
  • 4 or 5 basil leaves
  • Sea salt
  • Freshly grated Parmigiano Reggiano

Directions
  1. Cook tomatoes, minced onion, oil, butter, basil in a saucepan on low heat for 20 minutes.
  2. Blend everything with an immersion mixer ( or pour in a blender) and start adding the mascarpone cheese until perfectly incorporated.
  3. Adjust salt to taste.
  4. Meanwhile cook pasta al dente (according to package directions) in plenty of salted water.
  5. Drain and rinse pasta, add sauce and serve with a generous sprinkle of parmigiano reggiano.

This sounds so decadently rich! (or should I say "reich" tehe is that the 3rd, Lori - LOL) I wish they made a "lite" mascarpone - I love it, but it's so fattening. . . ;')
