Eastern Shore Soft Crab Sandwich Recipe

Ingredients

cleaned soft shell crab (gills, apron and "face" removed)

butter or margarine

flour

Old Bay Seasoning

pepper

Directions

Heat small frying pan. Add a few tablespoons of butter (or margarine). Dust the crab with Old Bay Seasoning & pepper. Lightly flour the crab. Fry (med/low heat) on each side until legs are crisp (approx 10 - 15 min each side). Serve as a sandwich on white bread with lettuce, tomato & mayo or eat them plain (my favorite).
