Pink Peppermint Cupcakes

Relax with a cup of tea or coffee with one of these sweet cupcakes. The kids will love them with a cold glass of milk
Ingredients
- 1 pkg (18 1/4 oz) white cake mix shopping list
- 1 1/3 cups water shopping list
- 3 egg whites shopping list
- 2 tblpns veg oil or melted butter shopping list
- 1/2 tsp peppermint extract shopping list
- 3 to 4 drops red food coloring shopping list
- 1 container (16 oz) prepared vanilla frosting shopping list
- 1/2 cup crushed peppermint candies ( about 16 candies) shopping list
How to make it
- Pre-heat oven to 350 degrees
- Line 30 standard (2 1/2") muffin pan cups with pink or white baking paper cups
- Beat cake mix, water, egg whites, oil, peppermint extract & food coloring with mixer on low speed for about 30 seconds. Then beat at medium speed about 2 minutes
- Spoon batter into prepared muffin cups, filling 3/4 full
- Bake 20 to 22 minutes until a tooth pick inserted into the centers comes out clean
- Cool in pans for 10 minutes & then remove cupcakes to wire racks to cool completely
- Spread frosting over cooled cakes & sprinkle with crushed peppermint candies
