How to make it

  • Pre-heat oven to 350 degrees
  • Line 30 standard (2 1/2") muffin pan cups with pink or white baking paper cups
  • Beat cake mix, water, egg whites, oil, peppermint extract & food coloring with mixer on low speed for about 30 seconds. Then beat at medium speed about 2 minutes
  • Spoon batter into prepared muffin cups, filling 3/4 full
  • Bake 20 to 22 minutes until a tooth pick inserted into the centers comes out clean
  • Cool in pans for 10 minutes & then remove cupcakes to wire racks to cool completely
  • Spread frosting over cooled cakes & sprinkle with crushed peppermint candies
