Ingredients
  • step one ********
  • 1- tablepoon butter
  • 1- large apple , peeled, cored, and cut into rings 1/2 inch thick
  • 2 - tablespoons calvados
  • ********************************

  • 2-1-1/2 inch thick boneless pork loin chops, well trimmed ( fat reserved)
  • 2- tablespoons calvados
  • 1/3 - cup apple cider
  • 1/4 - teaspoon sage
  • 1/4 - teaspoon thyme
  • 1/4 - teaspoon marjoram
  • pepper to taste

  • 1/2 cup whipping cream
  • salt to taste

Directions
  1. step 1
  2. melt butter in frypan over medium- high flame.
  3. add apples, turning to coat .
  4. saute 3-4 minute, or until firm and golden .
  5. add calvados to pan, heat for 10 -15 seconds; ignite......
  6. turn heat to low shake pan until flames die.
  7. remove apples and set aside.
  8. reserve liquid
  9. step 2
  10. place fat in clean frypan over medium flame, render until there is enough melted fat to cook chops.
  11. remove any pieces of fat from pan.
  12. add chops to pan and brown well approx 5 minutes per side.
  13. pour off any excess fat; add calvados....turn heat to low and ignite
  14. when flames die down add cider and seasonings
  15. cover and simmer for 30 minutes
  16. step 3
  17. preheat broiler, remove chops to a augratins ( or serving platter)
  18. overlap apples on top of chops.
  19. add reserved apple liquid to a sauce pan.
  20. turn flame to high ; boil unitl reduced to a syrup( 2-3 minutes) brush syrup over apples and broil 2 -3 minutes
  21. step 4
  22. whisk cream into syrup
  23. turn flame to high; boil until sauce is thickened slightly season
  24. nap chops with the sauce and serve..............
