Ingredients

6 eggs, hard cooked and diced

1/2 cup creamy salad dressing (i use either a prepared white, creamy coleslaw dressing or something like miracle whip -- you can use regular mayo too though)

1/4 tsp salt

1/8 tsp garlic salt

1/8 tsp celery salt

1/4 tsp dill weed

1/2 cup pitted kalmeta olives, chopped

1/4 cup feta cheese, chopped/crumbled

freshly ground black pepper to taste

1 medium tomato, sliced

1/4 seedless, english cucumber, sliced

a few sliced red onion rings (optional)

2 whole wheat pita pockets, cut in half (so you have 4 "pockets")

Directions

Combine filling ingredients. (eggs, salad dressing, salt, garlic salt, celery salt, dill, olives, cheese and pepper.) Set aside.

Open each pita pocket and line one side with slices of tomato, cucumber and onions. (if using) Put a few spoonfuls of egg mixture in each pocket.

Eat and enjoy! :)
