This is a unique blend of tastes. Really great as a side for almost any chicken, seafood or pork dish.

Ingredients
  • 1 bag of frozen spinach, chopped
  • 1/2 - 1 finely diced onion
  • garlic finely diced to taste - I use 2 large cloves
  • 1 fresh tomatoe, finely diced
  • 1 14 oz can of coconut cream - you can use coconut milk (even lite) if you wish - but the cream is much richer tasting
  • salt & pepper to taste

Directions
  1. Dice all vegetables very finely.
  2. Bring coconut cream to boil.
  3. Add vegetables and entire bag of frozen spinach (yes, right out of the bag)
  4. Add salt and pepper to taste.
  5. Simmer until cream thickens some.
  6. Serve by itself or over rice as a side dish or for a great and hearty lunch!
