How to make it

  • Wash the beans thoroughly,drain and place in a heavy,covered pot or saucepan with 4 cups cold water.Cover and simmer gently until tender,1 1/2 to 2 hours,adding a little water from time to time as necessary.
  • Heat the oil in a heavy frying pan and saute onion,garlic and hot pepper until onion is tender,but not browned.Add oregano,cumin,bay leaf,season to taste with salt and stir into beans,which should have quite alot of liquid.Cook,stirring from time to time,for half an hour longer then add the vinegar,pimentos with their juice,and the sugar.Mix cornstarch with a tablespoon of cold water and stir into beans.Cook,stirring from time to time for 5 minutes longer.
  • Though they will taste very good when done,they will be even better the next day as flavors meld overnight.
  • Serve as a meal or side with rice and a good hot sauce.Also delicious served with avocado with a squeeze of lime and a drizzle of olive oil on the side.
  • *Note:I have since made these soaking overnight and not.I find it is better not to soak beforehand.They get too soft,lose their shape and the color is not as nice in the finished dish.
