Steak tartare is made from raw beef, ground or chopped finely with raw egg yolks, Dijon mustard, capers, gherkins,red onions, mayonnaise,parsley and olive oil.

Ingredients
  • 4 cloves garlic minced
  • 2 pounds beef round steaks well trimmed, cut in 1-inch pieces and well chilled
  • 2 teaspoons salt
  • 4 egg yolks
  • 3 tbsp Dijon mustard
  • 2 teaspoons black pepper
  • 1/2 cup green onions very thinly sliced, including some green
  • 1/2 cup red onions, finely chopped
  • 3 tbsp olive oil
  • 4 gherkins
  • 4 tbsp mayonnaise
  • 2 teaspoons lemon zest
  • 1 3-ounce jar capers, well drained
  • 3 tablespoons white wine vinegar
  • 3/4 cup parsley, chopped
  • wheat crackers or cocktail rye bread
  • salt and pepper to taste

Directions
  1. About 1 hour before serving:
  2. In a small bowl, mix olive oil and garlic; set aside.
  3. In a food processor bowl fitted with the metal blade, place one-third of the meat at a time; cover.
  4. Process for 5 to 7 seconds or until meat is finely chopped.
  5. Shape meat into a round on a 12-inch platter.
  6. Press top flat.
  7. Sprinkle meat with salt and pepper.
  8. Layer with remaining ingredients
  9. . Sprinkle with vinegar and oil-garlic mixture.
  10. Top with parsley.
  11. Let stand at room temperature up to 30 minutes before serving but do not leave unrefrigerated for more than a total of 2 hours.
  12. Serve with crackers or bread.

  14. PLEASE NOTE:
  15. Eating raw meat is discouraged because it could contain harmful bacteria.
  16. The eating of raw eggs is also discouraged, as they are a prime source of salmonella.

Hi Elanie, My Mom used to make this for New Year's eve. It was really good but I would probably go to a good butcher for the meat (safety and all). Lucky for me I know one. Thanks and 5 right at you. MJ


This is my favorite steak and please, do not cook it! - you would kill all your flavors. I agree with MJ, you need to know your butcher.

Now your talking! Good stuff. Used to do this tableside a million moons ago. Ten Beach Drive, smokey piano bar, specialty of the house. So romantic and so decadent. Wonderful stuff.
