BLT Soup Recipe
I has this soup at a restaurant in Indianapolis and had to make it at home. It's so easy and yummy. Serve it with a nice sour dough bread and you've got a great meal.

Ingredients
  • 2 pounds "good" bacon, sliced and cooked til crisp
  • 1 large onion chopped
  • 1 (red or yellow) bell pepper, chopped
  • 4 cloves of garlic, minced
  • 2-28 ounce cans of diced tomatoes
  • 1 large head of Romaine lettuce, washed well and sliced (about 1 1/2 pounds)
  • 8 cups of veggie or chicken stock

Directions
  1. Leave some of the bacon drippings in the pan (a few tablespoons), saute the onions, pepper and garlic for about 5 minutes.
  2. Add the tomatoes (don't drain) and the stock, bring to a boil
  3. Add the lettuce and the bacon, bring to a boil and cook, covered for about 5 minutes.
  4. Serve with a nice sour dough or your favorite bread.
