BLT Soup

- 2 pounds "good" bacon, sliced and cooked til crisp shopping list
- 1 large onion chopped shopping list
- 1 (red or yellow) bell pepper, chopped shopping list
- 4 cloves of garlic, minced shopping list
- 2-28 ounce cans of diced tomatoes shopping list
- 1 large head of romaine lettuce, washed well and sliced (about 1 1/2 pounds) shopping list
- 8 cups of veggie or chicken stock shopping list
How to make it
- Leave some of the bacon drippings in the pan (a few tablespoons), saute the onions, pepper and garlic for about 5 minutes.
- Add the tomatoes (don't drain) and the stock, bring to a boil
- Add the lettuce and the bacon, bring to a boil and cook, covered for about 5 minutes.
- Serve with a nice sour dough or your favorite bread.
