How to make it

  • In a large pot over high heat, combine the chicken or seafood stock and the broccoli.
  • Cover and cook about 3 to 5 minutes, or until tender and set aside.
  • In a large skillet, cook the onions, garlic, bell pepper, and celery in the butter for about 3 to 4 minutes or until lightly browned.
  • Add the crawfish and Creole seasoning and continue to cook for 3 to 4 minutes.
  • Add to the broccoli and broth.
  • Stir in the half and half, spices, sour cream, cream cheese and cheese.
  • Cook over medium heat, stirring often for 3 to 4 minutes.
  • Mix the cornstarch and cold water and stir into the soup pot.
  • Continue to cook over low/med heat, stirring constantly until mixture thickens slightly, about 4 to 5 minutes.
  • Serve with hot French bread and if desired hot cooked rice!
