Bayou Broccoli Soupcajun Style

- 1 stick butter shopping list
- 1 tablespoon garlic, minced shopping list
- 1 small onion, chopped fine shopping list
- 1 small green bell pepper, chopped fine shopping list
- 1 cup finely chopped celery shopping list
- 1 pound crawfish tails shopping list
- 4 cups chopped fresh broccoli shopping list
- 8 oz. cream cheese, softened shopping list
- 6 cups seafood or chicken stock shopping list
- 2 cups half and half shopping list
- 1 tablespoon creole spice shopping list
- 1 teaspoon onion powder shopping list
- 8 oz. shredded cheddar cheese shopping list
- 4 oz. shredded pepper jack cheese shopping list
- 1 cup sour cream shopping list
- 1/2 cup of sliced green onions(white and green parts) shopping list
How to make it
- In a large pot over high heat, combine the chicken or seafood stock and the broccoli.
- Cover and cook about 3 to 5 minutes, or until tender and set aside.
- In a large skillet, cook the onions, garlic, bell pepper, and celery in the butter for about 3 to 4 minutes or until lightly browned.
- Add the crawfish and Creole seasoning and continue to cook for 3 to 4 minutes.
- Add to the broccoli and broth.
- Stir in the half and half, spices, sour cream, cream cheese and cheese.
- Cook over medium heat, stirring often for 3 to 4 minutes.
- Mix the cornstarch and cold water and stir into the soup pot.
- Continue to cook over low/med heat, stirring constantly until mixture thickens slightly, about 4 to 5 minutes.
- Serve with hot French bread and if desired hot cooked rice!
