How to make it

  • In large skillet, saute spinach and garlic in 2 tablespoons butter. Remove with slotted spoon and set aside. Drain and wipe out skillet.
  • Pound chicken breast halves to a 1/2 inch thickness.
  • Add 2 tablespoons butter to skillet and melt over medium-high heat.
  • Sprinkle chicken breasts with salt and pepper and then dredge in flour.
  • Cook chicken breasts in skillet until browned on both sides and chicken juices run clear. Be careful not to overcook.
  • Remove chicken and arrange on greased baking sheet.
  • Add remaining butter to skillet.
  • Saute mushrooms in butter until softened. Increase heat and cook until liquid is evaporated.
  • Remove from heat.
  • Top chicken breasts with tomato slices and broil 2 to 3 minutes to warm tomatoes. Remove from oven.
  • Divide spinach and mushrooms on top of chicken breasts.
  • Top with cheese.
  • Broil 3 to 4 minutes or until cheese is melted
  • Sprinkle with fresh parsley before serving.
