Chicken Sentino More Or Less Recipe
I took several recipes and put them together to make this. Perfect for a special evening of entertaining. Easily doubled for a bigger crowd!

Ingredients
  • 1 (10 ounce) box spinach, thawed and squeezed dry
  • 1 clove garlic, minced
  • 1 stick unsalted butter, divided
  • 4 boneless, skinless chicken breast halves
  • salt
  • ground black pepper
  • all-purpose flour
  • 4 large slices ripe tomato
  • 2 cups fresh mushrooms, sliced
  • 4 slices Swiss cheese
  • fresh parsley, minced

Directions
  1. In large skillet, saute spinach and garlic in 2 tablespoons butter. Remove with slotted spoon and set aside. Drain and wipe out skillet.
  2. Pound chicken breast halves to a 1/2 inch thickness.
  3. Add 2 tablespoons butter to skillet and melt over medium-high heat.
  4. Sprinkle chicken breasts with salt and pepper and then dredge in flour.
  5. Cook chicken breasts in skillet until browned on both sides and chicken juices run clear. Be careful not to overcook.
  6. Remove chicken and arrange on greased baking sheet.
  7. Add remaining butter to skillet.
  8. Saute mushrooms in butter until softened. Increase heat and cook until liquid is evaporated.
  9. Remove from heat.
  10. Top chicken breasts with tomato slices and broil 2 to 3 minutes to warm tomatoes. Remove from oven.
  11. Divide spinach and mushrooms on top of chicken breasts.
  12. Top with cheese.
  13. Broil 3 to 4 minutes or until cheese is melted
  14. Sprinkle with fresh parsley before serving.
