Chicken Sentino More Or Less

- 1 (10 ounce) box spinach, thawed and squeezed dry shopping list
- 1 clove garlic, minced shopping list
- 1 stick unsalted butter, divided shopping list
- 4 boneless, skinless chicken breast halves shopping list
- salt shopping list
- ground black pepper shopping list
- all-purpose flour shopping list
- 4 large slices ripe tomato shopping list
- 2 cups fresh mushrooms, sliced shopping list
- 4 slices swiss cheese shopping list
- fresh parsley, minced shopping list
How to make it
- In large skillet, saute spinach and garlic in 2 tablespoons butter. Remove with slotted spoon and set aside. Drain and wipe out skillet.
- Pound chicken breast halves to a 1/2 inch thickness.
- Add 2 tablespoons butter to skillet and melt over medium-high heat.
- Sprinkle chicken breasts with salt and pepper and then dredge in flour.
- Cook chicken breasts in skillet until browned on both sides and chicken juices run clear. Be careful not to overcook.
- Remove chicken and arrange on greased baking sheet.
- Add remaining butter to skillet.
- Saute mushrooms in butter until softened. Increase heat and cook until liquid is evaporated.
- Remove from heat.
- Top chicken breasts with tomato slices and broil 2 to 3 minutes to warm tomatoes. Remove from oven.
- Divide spinach and mushrooms on top of chicken breasts.
- Top with cheese.
- Broil 3 to 4 minutes or until cheese is melted
- Sprinkle with fresh parsley before serving.
