Another staple learned from Rollande et Pierre, circa 1974. Slightly sweet, subtle complexity very good dressing.

Ingredients
  • 4 oz. roquefort cheese
  • 1/2 cup of good quality mayonnaise
  • 1/2 cup of sour cream
  • 1 garlic clove crushed
  • 1/2 teaspoon of white pepper
  • 1 scant tablespoon of white sugar
  • 1/2 to 3/4 teaspoon of white worchestershire sauce
  • 2 dashes of tabasco sauce
  • enough milk to thin to your desired consistency

Directions
  1. Crumble blue cheese, or mash with a fork.
  2. I don't blend, I like it chunky
  3. Mix with remaining ingredients.
  4. This must sit for at least two hours but I find it better overnight.
  5. The next day, if it is too thick, thin with a little milk.
  6. Kids like this blue cheese dressing because it isn't too tart.

Yummo. Will be making today. I don't buy bottled dressings anymore, the homemade ones are so much better and blue cheese is right at the top of my list. Thanks for sharing. I know this one is going to be heavenly.

I only make homemade dressings too. Packet mixes are nasty as are bottled dressings, not to mention they are full of questionable ingredients. I will be making this one tonight, it sounds delightful! Thanks!
