Ingredients
  • 1 lb honey
  • 2 cups sugar
  • 4 eggs
  • 5 oz oil
  • 1/2 cup rye whiskey
  • 3 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp allspice
  • 3/4 tsp cinnamon
  • 3 tsp. baking soda
  • 1 cup brewed coffe, cold
  • 1/2 of a large apples peeled and grated
  • granted rind of an orange
  • 1 Tbs candied citron peel, chopped ( lemon, lime, orange ) optional
  • 1 cup chopped walnuts

Directions
  1. Sift all the dry ingredients together except sugar
  2. Cream the honey and sugar
  3. Beat eggs, oil and whiskey.
  4. Add the honey mixture alternately with the cofee into the dry mixture.
  5. Fold in the rind, nuts, apples and citron.
  6. Grease and line a large 9 x 13, 10 x 14 or similar pan with greased brown paper( I cut from a paper bag )
  7. Add the batter to the pan.
  8. Batter will be thin
  9. Bake in a 350F oven until tested done, may be up to an hour.
  10. If using pyrex decrease heat to 325F
  11. Bake in the middle oven
  12. May cover with foil last 15 minutes if browning too fast
  13. It's done when sides pull away and center springs back when lightly touched or wooden toothpick comes out clean
  14. Note: Remember, mixture must be baked in a flat pan and not in a tube or bundt pan or it will fall since the batter is thin.
  15. Cool in pan 15 to 20 minutes.
  16. Carefully loosen and invert on sugar/cinnamon dusted tea towel..
  17. Invert cake back onto serving platter.
  18. I usually cut cake in half, freeze one portion and cut the other into pieces for servings
  19. This is a moist lovely cake with flavors improving with age.

This sounds very christmassey. As my husband doesn't like the traditional English fruitcake as it is so rich, I will try this one.

It's a great cake for any holiday. Not at all like a fruit cake, just a moist, dense fragrant honey type of cake.I'm sure you will enjoy it!

oh my goodness....I rate it a five as this computer went to fast and I have to correct this....I rate it a five and not a three as it just happened too fast and so I want to re do it but I don't know how as it was a terrible mistake......I will see if I can contact the owner of this site and tell him what happened and so apologize.

I've added my five as well Midge. Great recipe! I can appreciate Puddle's predicament, since I accidentally did the same thing to someone's recipe. But I hit the back arrow, hoping to correct it and somehow couldn't get back to the recipe to make amends. Hopefully they don't hate me!
