Rye Whiskey And Honey Cake

- 1 lb honey shopping list
- 2 cups sugar shopping list
- 4 eggs shopping list
- 5 oz oil shopping list
- 1/2 cup rye whiskey shopping list
- 3 1/2 cups flour shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp allspice shopping list
- 3/4 tsp cinnamon shopping list
- 3 tsp. baking soda shopping list
- 1 cup brewed coffe, cold shopping list
- 1/2 of a large apples peeled and grated shopping list
- granted rind of an orange shopping list
- 1 Tbs candied citron peel, chopped ( lemon, lime, orange ) optional shopping list
- 1 cup chopped walnuts shopping list
How to make it
- Sift all the dry ingredients together except sugar
- Cream the honey and sugar
- Beat eggs, oil and whiskey.
- Add the honey mixture alternately with the cofee into the dry mixture.
- Fold in the rind, nuts, apples and citron.
- Grease and line a large 9 x 13, 10 x 14 or similar pan with greased brown paper( I cut from a paper bag )
- Add the batter to the pan.
- Batter will be thin
- Bake in a 350F oven until tested done, may be up to an hour.
- If using pyrex decrease heat to 325F
- Bake in the middle oven
- May cover with foil last 15 minutes if browning too fast
- It's done when sides pull away and center springs back when lightly touched or wooden toothpick comes out clean
- Note: Remember, mixture must be baked in a flat pan and not in a tube or bundt pan or it will fall since the batter is thin.
- Cool in pan 15 to 20 minutes.
- Carefully loosen and invert on sugar/cinnamon dusted tea towel..
- Invert cake back onto serving platter.
- I usually cut cake in half, freeze one portion and cut the other into pieces for servings
- This is a moist lovely cake with flavors improving with age.

This sounds very christmassey. As my husband doesn't like the traditional English fruitcake as it is so rich, I will try this one.
