New England Buttermilk Griddle Cakes

- 2 C flour shopping list
- 1 Tbl sugar shopping list
- 1 tsp salt shopping list
- 3 tsp baking powder shopping list
- 1/4 c oil shopping list
- 2 large eggs shopping list
- 1 C + buttermilk shopping list
- or shopping list
- buttermilk baking mix may be used, follow directions on container shopping list
How to make it
- Heat griddle or pan
- Mix all ingredients together, adding however much milk is needed to make a pourable, but not thin batter.
- Grease the griddle or pan with shortening
- Using a spoon or a pitcher, pour the batter onto the griddle, making the size griddle cakes desired
- When small bubbles rise to the surface of the griddle cake, flip over and cook an additional minute or minute and a half.
- Serve with butter and HOT syrup.
- IMPORTANT - Heat the maple syrup in the microwave.......there is no good reason to pour cold syrup on hot griddle cakes....that defeats the purpose of a hot breakfast!
- Any extras can be cooled and stored in freezer bags in a single layer.....heat in the toaster for a quick, hot breakfast.
