How to make it

  • In a microwave-safe dish, stir together sugar, peanuts, corn syrup and salt; mix well.
  • Microwave on high for 6 to 9 minutes or until light brown.
  • Add butter and vanilla, stirring well. Microwave on high for 2 minutes.
  • Add baking soda and gently stir until light and foamy.
  • Pour into a buttered baking sheet that has sides. Let cool then break into pieces.
  • Makes 16 servings.

    I like using salted peanuts too and have a chili peanut brittle recipe from this site so am going to combine the 2
