Ingredients
  • 1 cup granulated sugar
  • 1 cup raw peanuts (I use salted because I like the contrast in the flavors)
  • 1/2 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 teaspoon butter or margarine
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Directions
  1. In a microwave-safe dish, stir together sugar, peanuts, corn syrup and salt; mix well.
  2. Microwave on high for 6 to 9 minutes or until light brown.
  3. Add butter and vanilla, stirring well. Microwave on high for 2 minutes.
  4. Add baking soda and gently stir until light and foamy.
  5. Pour into a buttered baking sheet that has sides. Let cool then break into pieces.
  6. Makes 16 servings.

I like using salted peanuts too and have a chili peanut brittle recipe from this site so am going to combine the 2
